Do you ever look in your freezer and decide it is time to start cooking? We had two pounds of ground sirloin and two pounds of bacon, so it was a no brainer to make meatloaf.
I mentioned I had a baking pan which would allow us to make mini loafs and we were off to the races. How do you say no to productive meal prep as we were able to freeze four of them for future use! Big Guy took on the cooking chores while I offered to clean up. He started by sautéing the onions and peppers with one pound of the bacon. Of course, he cooked the other pound of the bacon for a future meal! He mixed the cooled ingredients with the meat, panko, eggs, salt, and pepper to create the mini loafs before doing the final cooking. It was the perfect size to make sliders enjoyed with a side of @oldviennallc chips!

I have never been able to figure out how to make a meal for two people, so I tend to have leftovers. In this case, I made a focaccia which was too big to eat in one sitting.
It became the perfect snack with Charmane’s Bread Dip from @salt_sisters. As described, the mix is “robust and deliciously flavorful with hints of garlic and sun-dried tomato with a blend of herbs.” They noted the mix was “addictive,” so I may have to ask for an antidote since I agree it is a flavor I want to be a constant in @carondeletkitchen! I baked up chicken for a previous salad recipe but had enough to make another meal. Our Doodle would have been happy to eat it all herself, but too bad!
I found a jar of Parmesan Pesto in my pantry and knew pasta was in my future. I sauteed onions, peppers, and tomatoes to include with the chicken. Big Guy loves his bread, so I also baked up focaccia from my mixes from @kingarthurbaking. It was the perfect quick meal to make during a busy day of gardening and doing Spring cleaning. I followed the recipe exactly... except for the things I changed... LOL!
Big Guy always has his eyes out for interesting cookbooks. The latest to join my library is “The Bergdorf Goodman Cookbook” which fits in nicely with my department store/hotel collection.
As I turned the pages, I was drawn to the Gotham Salad which according to the book many “excursions to @bergdorfs are planned around a lunch of this dish.” How could I not attempt to make it especially since it included the recipe for the thousand island dressing! The salad was delicious, but full disclosure, it was a lot of work as I had to roast the chicken breast and red beets along with cooking bacon and boiling eggs. I probably should have dressed it like a cobb salad, but following the directions, I threw everything into the bowl and watched my thousand island dressing take on a pink hue once the beet juice gave it a dye job. I can see me making this salad again, but I think I’ll just visit the grocery store salad bar for the ingredients so I can make this salad in thirty minutes instead of three hours. It will certainly save me time along with money since the ingredient list was long and costly. It is hard to believe that our Doodle turned two and just passed her gotcha day. It has been highs and lows with this pup, but she is a strong part of our lives. We love to laugh at her antics and celebrate her milestones when we aren’t grumbling about her poking her paw through the front screens again!
It seems her “Doodleness” is strong when it comes to being a picky eater. I have been busy in @carondeletkitchen pulling out old recipes for dog treats. I am looking forward to more attempts in the future, but I still had two boxes of mix from @kingarthurbaking in the pantry. Doodle loves their pumpkin and apple mix, so I made a double batch to be sure she has plenty to share with the “boys” next door. These biscuits are “woof” approved around here! I have been working on improving my baking skills, so I opted to try making bagels. Before you get scared, the seed was planted when I received my last catalog from @kingarthurbaking.
Once I got through my nervous anticipation of getting the yeast temperature right, I was delighted to see my lovely dough come together. It takes time so a shout out to all bagel makers around the Lou as there is plenty of mix, then rest time, with this recipe. The directions were straightforward and the baking time was quick once we got through the preparation process. I feel confident I will be making these again, so I guess I better hit up @larder_cupboard for more of her delicious jellies and jams! I love that Easter time includes the birthday of my great niece. I realize most moms would go for rainbows and unicorns, but our little one loves @oldviennalllc Honey BBQ chips, so with @abrandt1026 approval, we decided to go all in with the theme.
Big Guy went on the hunt for t-shirts with Old Vienna chips on them. There were plenty of adult sized shirts, so we opted to purchase iron on labels and an adorable @oshkoshkids overalls with pink stripes. The family seemed quite confused when Ms. P came out of her bedroom rocking her overalls with her Red Hot Riplets label. It was only seeing her make a beeline to the table for the bag of chips that everyone understood the meaning behind her special outfit. Can it be anymore St. Louis? It only makes sense as these super cool old people are thrilled our girl loves St. Louis and its makers too! |
