Big Guy and I have been shaking up our Lenten feasts this year to include some healthy meals. Do not get me wrong, I LOVE a good fish fry, but my doctor reminds me to remember all things in moderation.
We revisited a pizza we made in the past which was simple. The two main ingredients are red onions and roasted red pepper. Big Guy sauteed the red onions in olive oil using some of the oil to create the first layer on the pizza dough. He followed it with parmesan cheese and then the vegetables topped off with a light layer of Imo’s cheese. It was the perfect light and surprisingly satisfying complete meal.
