My aunt has been giving us a gift card annually to our local butcher so we can load up our freezer with steaks, bacon, and ground sirloin. It harkens back to our parents who used to buy “half a cow” and fill up their deep freezer.
I surveyed our freezer and realized it was time to start using our purchases. I eyed the hamburger and decided to make nachos. I admit this type of meal is my “trigger” to overeat, so I tend to make it once a year at home yet still getting my fill at local restaurants occasionally. My version is simple with minimal ingredients. I usually use only onions and ground sirloin, but I had a red pepper quickly expiring so I threw it into the mix along with a healthy dose of Mexican seasonings. Once the meat was prepared, it was a matter of getting out my large sheet pan to assemble the meat with tortilla chips and cheese. It is a fast meal that gets food on the table when we are hungry. We usually add our favorite salsa and dinner is served along with a refreshing beverage.
