Big Guy and I love fruit, but we are bad about incorporating it into our daily diet. I feel like the mom who hides vegetables in her kid’s food, but I have been trying diverse ways to add fruit whether it is through food or a fun drink.
I have been known to add fruit into salads, appetizers, and of course, dessert. I even bought a Ninja bullet to make smoothies for breakfast. My latest venture is to make raspberry and mango sorbet in my ice cream maker. I have loved the fresh flavor of fruit ever since our friends introduced us to it, plus it adds zing to my drink menu whether it is a margarita or Manasota Sunset. Who says you cannot have fun with your food while wanting summer to come quickly to enjoy these drinks poolside! My aunt has been giving us a gift card annually to our local butcher so we can load up our freezer with steaks, bacon, and ground sirloin. It harkens back to our parents who used to buy “half a cow” and fill up their deep freezer.
I surveyed our freezer and realized it was time to start using our purchases. I eyed the hamburger and decided to make nachos. I admit this type of meal is my “trigger” to overeat, so I tend to make it once a year at home yet still getting my fill at local restaurants occasionally. My version is simple with minimal ingredients. I usually use only onions and ground sirloin, but I had a red pepper quickly expiring so I threw it into the mix along with a healthy dose of Mexican seasonings. Once the meat was prepared, it was a matter of getting out my large sheet pan to assemble the meat with tortilla chips and cheese. It is a fast meal that gets food on the table when we are hungry. We usually add our favorite salsa and dinner is served along with a refreshing beverage. Big Guy and I have been shaking up our Lenten feasts this year to include some healthy meals. Do not get me wrong, I LOVE a good fish fry, but my doctor reminds me to remember all things in moderation.
We revisited a pizza we made in the past which was simple. The two main ingredients are red onions and roasted red pepper. Big Guy sauteed the red onions in olive oil using some of the oil to create the first layer on the pizza dough. He followed it with parmesan cheese and then the vegetables topped off with a light layer of Imo’s cheese. It was the perfect light and surprisingly satisfying complete meal. Our sweet niece, @abrandt1026, suggested we do brunch. It would have been easy to pick a restaurant, but Big Guy and I opted to cook from scratch in @carondeletkitchen.
Big Guy was very excited to try a biscuits and gravy recipe he discovered online. He hit a home run with the delicious food accompanied by fluffy eggs and sausage links. I added scones and shortbread so we could round out our savory meal with delightful sweets. I am sure there is no surprise that we had leftovers which I will look forward to having again in the next few days. I know, poor me! |
