I was fortunate to learn how to make an apple pie from my MIL who seldom allowed anyone else to cook in her kitchen. It was a basic recipe that proved to be easy to make and always delicious.
In time, I started to tweak the recipe by using fresh ingredients and adding a crumble topping. I never thought it would become the most requested dessert from my family and friends. Just last year, I made an extra pie for the holidays that was hidden and secreted back to Kansas City which brought out a chorus of hugs and tears. Wow! I am most touched by @abrandt1026 who no longer thinks twice about asking for an apple pie. I have made it for her in good times and bad, knowing this pie gives her my love, comfort, and support for the warrior she is every single day. It does not get any better.

I have been stocking up on soup supplies and the turn in the weather has me back in the kitchen. A staple in @carondeletkitchen is chicken noodle soup.
Big Guy takes credit for making the first pot but has allowed me to take over the recipe and elevate it. I start by baking the chicken, so I get the delicious flavor from the olive oil, salt, and pepper. While the chicken is baking, I sauté the onions, celery, and carrots in my large Dutch oven. The chicken and vegetables usually cook in about the same time, so it is a matter of throwing all the ingredients into the same pot. Aside from the chicken and vegetables, I add chicken broth, egg noodles, more salt and pepper, then place the entire pot into the oven to continue cooking for two to three hours which fills the kitchen with delicious aromas. It becomes stew-like and really sticks to your bones. It is perfect for a day if you feel ill or just on a chilly day. I love this time in my life when I can slow down and learn new things. The work Big Guy has put into @carondeletgarden has been nothing short of miraculous. I know it feeds his mind, body, and spirit.
I feel the same way, but I would add my joy in creating interesting meals from the fruits of his labor in the garden. He has planted fall lettuce, and the garlic and onions will be planted soon to winter over into next year. My surprise, and moment of learning something new, was seeing a fall harvest of raspberries. I am excited to use them not only as a topping for my waffles, but to once again make triple berry muffins. One final gift of summer to ease our transition to the cooler days of Fall. |
