Ah, the wintery weather is here, and it is time to load up on soups. I was prepared for the storm and purchased the ingredients I needed to make bacon and baked potato soup.
The oven was hot as I had to bake my bacon and potatoes before putting the soup together. I did not complain as it heated up the kitchen and created lovely aromas! Once I completed the baking portion of this soup, I quickly made light work of sautéing the onions, celery, and carrots. The recipe calls for butter and flour along with thyme which quickly thickens the added milk to give this soup its creaminess. The last ingredients to go into the pot are cheddar cheese, bacon, the chopped potatoes, and a cup of chicken broth. I cooked the soup for another hour to meld the flavors and added salt and pepper to taste. The soup is hearty, but I had to serve it with a side of bread to be able to wipe the bowl clean so as not to miss any of it goodness. Perfect!
