I remember going to my aunt’s house for Christmas brunch and seeing all types of casserole dishes meant to be shared with large groups. It does not work when it comes to cooking for two, but that never stopped me!
I attempted a potato basil frittata from @inagarten and I got hooked on making this recipe for a simple dinner. The recipe serves eight, but the good news is it meant I could wrap up the leftovers and freeze it for a future breakfast, lunch or dinner. I did not have the listed ingredients to follow her recipe, so I improvised with what I did have in the refrigerator. The recipe starts with frying up the potatoes in a pan in which I added onions for additional flavor. Instead of Gruyere cheese, I used a smoked parmesan from @redapplecheese along with Imo’s cheese and half and half to mellow out the flavors. I did include basil, salt, pepper, and bacon to truly give the frittata a full-bodied experience to enhance our dinner experience. I love to be bold and fearless in the kitchen with my instincts guiding my decisions. Based on Big Guy’s empty plate, I think I did well!
