Butterscotch Oatmeal Cookies

Big Guy has been nursing a sore knee and needed TLC. I know he is uncomfortable when he asks for a special bake from @carondeletkitchen.

“Could you make me a batch of butterscotch oatmeal cookies, please?” Absolutely, if only I had made them in the past. Challenged accepted!

I did research and finally settled on doing my own recipe. I reviewed my oatmeal raisin cookie recipe and swapped out the raisins for butterscotch chips. I also added pecans and sea salt.

The cookies were soft and chewy and packed with good flavor. The only downside is the recipe makes four dozen cookies, so Big Guy will have plenty to enjoy as I placed three dozen in the freezer, so we do not eat them all at once!
