I have been humbled by baking in my later years, but I admit, I never really ventured past chocolate or peanut butter cookies in my teen years. I found it interesting that baking is VERY precise, whereas cooking can be more flexible. Thank goodness Big Guy is around since his brain is wired for specificity, so I can relax more when I am baking. I say this not to say I cannot bake on my own, but it is nice to have a “sous chef” who can fill in the gaps for my talents when I question a step in a recipe.
I am proud to say; however, I was recently able to “create” a recipe based on Big Guy’s suggestion to make butterscotch cookies. As we talked about the flavor profile, it became clear I should make oatmeal cookies and use butterscotch chips instead of chocolate. I kept it simple and did not add nuts or fruit so the cookie would “explode” with butterscotch. It turned out well and there were no complaints from the Big Guy!
