I have been stocking up on soup supplies and the turn in the weather has me back in the kitchen. A staple in @carondeletkitchen is chicken noodle soup.
Big Guy takes credit for making the first pot but has allowed me to take over the recipe and elevate it. I start by baking the chicken, so I get the delicious flavor from the olive oil, salt, and pepper. While the chicken is baking, I sauté the onions, celery, and carrots in my large Dutch oven. The chicken and vegetables usually cook in about the same time, so it is a matter of throwing all the ingredients into the same pot. Aside from the chicken and vegetables, I add chicken broth, egg noodles, more salt and pepper, then place the entire pot into the oven to continue cooking for two to three hours which fills the kitchen with delicious aromas. It becomes stew-like and really sticks to your bones. It is perfect for a day if you feel ill or just on a chilly day.
