Do you ever feel stuck in a grain groove? I tend to habitually grab rice and totally forget there are other options that taste great.
I planned to roast two chicken breasts when Big Guy asked if I would make couscous with onions and apricots. I realize the combination may sound strange, but I found the recipe early on in my “getting to know the kitchen” phase. The sweetness of the apricots adds pop to the couscous and onions, and it is easy to make as part of a complete meal. I sauteed the onions while cooking the couscous in chicken broth. The last step is to add chopped apricots to the onions just prior to mixing it in with the cooked couscous. Fast and easy side dish, check!
