I do not have the urge to run off to Paris to become a professional chef, but I can certainly learn and attempt to make recipes from those who did have that dream.
Big Guy and I watched a show with Rachel Khoo as she opened her apartment to share home cooked meals. She claimed to take a modern approach to Cordon Bleu Cookery. It is this statement which caused me to put an @carondeletkitchen spin on her Croque Madame Muffins which is “essentially a toasted cheese and ham sandwich.” The first time I followed the recipe to the letter which included making a mornay sauce. Rachel’s recipe for the sauce called for butter, flour, milk, Dijon mustard, nutmeg, Gruyere, salt and pepper. I enjoyed making the sauce, but it did not lend itself to making a quick breakfast. I opted to give it a twist by placing the flatten and buttered bread into a muffin tin and adding ham as my first layer. I next put egg whites in my muffins and egg yolks for my Big Guy. I topped it off with Vermont cheddar cheese and baked it until
