I have been reading my grandma’s recipes again. I was amazed by the number of dessert recipes she had in her file. I know I should not be too surprised since desserts were her specialty. I remember consuming them after every meal on my childhood visits to Saint Louis.
My favorite was her Cool Whip Dessert. I am sure it was my dad’s favorite as well since he was delighted when I started making them when I first got married. The recipe takes time management in the respect you need to bake the bottom layer which consists of flour, pecans, and butter. Once you allow the crust to cool, you can quickly add the layers. The first layer is cream cheese, powered sugar, and Cool Whip. The second layer is pudding of your choice. My choice is always butterscotch since it is my favorite. The third layer is Cool Whip topped with pecans. It is best if you make the dessert a day before serving to allow for the flavors to meld and the ingredients to be properly chilled. I know my grandma would be proud to know this dessert continues to live through the generations. I always feel her love through this dessert, and I hope I pass it along to my family and friends.
