“You made soup in the middle of this heat wave?” I know it sounds crazy, but I did pick a cloudy day in the 80’s.
The reason behind this decision is the leftover steak we brought home from one of our outings to a restaurant to avoid turning on the oven or stove. It was more than enough to throw together a pot of beef barley soup. I love this soup because it is easy to put together. I sautéed the onions, peppers, green beans from @carondletgarden, and carrots combining in the steak once the vegetables softened. After adding six cans of beef broth and barley, I left it alone to meld together into a perfect soup. I love easy recipes especially when I know it will be enough to freeze for an actual chilly day in the Fall!
