The perfect fall day for me is cooking while having all the windows open. I have fond memories of walking my previous dogs around the neighborhood and smelling delicious aromas coming from the windows of my neighbors inspiring me to get home and begin my own meal.
I hope we have inspired our neighbors to make a meatloaf because there is nothing better for a meal. The @carondeletkitchen version is amped up with sauteed onions and bacon combined with the ground sirloin. The mixture would be incomplete without the binders of smashed Ritz crackers and eggs. It is delicious served hot or kept overnight to make sandwiches. Every year, Big Guy and I get caught saying it is the best meatloaf I ever made to date. The true story is the meal is what I wanted that I did not know I wanted!
