Big Guy and I enjoy our weekly happy hours @pietrosstl. We are consistent with our cocktails most weeks while enjoying different entrees.
The pasta portions are always generous, so I found myself wanting to incorporate my leftover Pasta Piselli into a @carondeletkitchen pasta. The Piselli is a simple dish of bow tie noodles with snap peas tossed with olive oil and garlic. Looking at my ingredients, I knew immediately I should make a pasta primavera. I used onions, carrots, and peppers from @carondeletgarden along with two Roma tomatoes. I placed the vegetables, including the snap peas, into the pan and sauteed them with olive oil. While that pan was in the works, I put noodles into the pot from @parkerstable. Once it was ready, I poured the hot pasta water over the noodles from @pietrosstl to quickly heat them up as I rinsed the pasta. Back into the pot and I poured my vegetables over the pasta and gave it a good stir with a splash of balsamic vinegar. Big Guy grabbed the parmesan cheese and a lovely bottle of wine. Dinner is ready!
