Big Guy and I love potato pancakes, but we never think to make them unless we have leftover mashed potatoes. What is wrong with us? It seems the rare occasion we make them we wax poetic about their greatness. We really need to purposefully make them as they are terrific by themselves or as a side to a steak meal.
The best part is you can be creative with the flavors whether you add onions or spices to them. This time we kept things simple by frying up the potato pancakes and serving them with apple butter as our main meal. It was the perfect taste of fall!
