I could tell Mardi Gras season ended when Big Guy started asking for Louis Armstrong’s Red Beans and Rice. We had our first taste of it in New Orleans and now it is an annual staple @carondeletkitchen. Louis Armstrong loved this particular dish so much that he often signed his letters: “Red Beans and Rice-ly Yours, Louis.” Could he possibly be any cooler?
We stopped by @legrandsmarket to get Ozark ham along with @zatarains rice. Big Guy had already ordered the @camelliabeans and had them soaking in water, so it was time to put the meal together. As Louis Armstrong played songs in the background, Big Guy doubled checked the recipe found @nytimescooking. It takes four hours as you layer the flavors and you want to give it time to meld into a pot of deliciousness, but I promise you it is worth the labor. It is also wonderful to freeze since I guarantee you will have leftovers!
