What do you do when you have a new cookbook and leftover carrots from your harvest @carondeletgarden? Thanks to @alisonroman I found a recipe for spiced, butter-roasted carrots that I could make with my roasted chicken breasts.
It was an easy way to add vegetables to my dinner as my prep was minimal. After slicing the carrots and walnuts, I mixed them in olive oil, salt, pepper, cinnamon, coriander, red pepper flakes, and fennel seeds. The carrots were ready at the same time as the chicken. Two sheet dinner made my weekday cooking a breeze!
