Big Guy and I were talking about what soups to make as we continue into the winter months. I had been focusing on beef soups, so we started to discuss our favorite chicken-based soups and tortilla soup jumped to the top of the list.
Tortilla soup was one of the first soups I made after we got married which I adapted from a recipe by @emeril. I tend to be brave with my spices, so I know one variation to the recipe was the addition of jalapenos and ancho chilis which gives the soup an earthy heat that is not too powerful. I also took a cue from @inagarten and bought @rosalitasstl cheese sauce, salsa, and tortilla chips. We also bought a small container of guacamole since the avocados were not ripe. We layered the ingredients on top of the soup and enjoyed a lovely meal.
