Spiced and Herbed Quinoa with Green Onions

Carondelet Kitchen Spiced and Herbed Quinoa with Green Onions

4-6 Servings
TIME:
1 hour

A lovely vegan recipe with a lot of flavor.

INGREDIENTS
 
1 cup quinoa
2 cups chicken stock
½ cup roasted red peppers
½ cup tomato, diced
2 tbsp red onion, diced
2 green onions, thinly sliced
2 tbsp chopped cilantro
1 tspn chopped jalapeno
3 tbsp extra-virgin olive oil
1 tbsp fresh lemon juice
PREPARATION
 
Step 1
Combine the quinoa and stock in a small pot and bring to a boil.  Reduce the heat to simmer and cover.  Cook for 10 to 15 minutes or until the liquid has been absorbed.  Let cool completely.
 
Step 2
In a large bowl, combine the cooled quinoa with the remaining ingredients.  Toss to mix thoroughly.  Serve chilled.
