We have been enjoying Be My Guest with @inagarten. On a recent episode, she made Ravioli en Brodo for Emily Mortimer. Ina’s short cuts inspired me to make this Italian twist comfort food.
The soup is a basic chicken soup served with ravioli instead of noodles. I too opted to do my own version by using ingredients I had on hand in the Carondelet Kitchen. I baked a chicken breast while getting my vegetables in order. I had carrots, onion, celery, garlic, snap peas, and red pepper in the drawer. As I investigated the freezer, I was thrilled to see mushroom ravioli. I sautéed my vegetables until they were soft and ready for chicken stock. I added the cooked chicken and ravioli and left it all to finish cooking on the stove top. I added crusty bread, also found in the freezer, for the perfect light evening meal.
