We have come to the end of our San Marzano tomatoes. I really have no cause to complain as our four plants produced over twenty-five pounds!
As the Big Guy cleaned out the raised bed, he found a few tomatoes left that had not quite ripened. After spending time in our kitchen window, this small collection is ready to be put into a meal. What shall I make with it? I am thinking about a smashed pasta sauce whereby you cook the tomatoes in olive oil until they burst into the pan. It makes a lovely sauce and take only minutes to prepare. I could also make bruschetta or salsa. The possibilities are endless, and I would be happy to take suggestions. What would you make from the last of the San Marzano tomatoes?
