Our kids love to challenge us from time to time with foods they love. Can we make it better than their restaurant experience?
Cue the music…it is time for the butternut squash soup throwdown! It is a good thing the Big Guy had a bumper crop of them since we have been going crazy trying new recipes. I also know he is quite happy to be at the end of this madness since peeling and cutting the darn things is work! Back to the challenge. I prepared my favorite Ina Garten recipe, which is simply squash, apples, onions, chicken stock, salt, pepper, and curry. You bake the squash, apples and onions followed by a quick puree in the food processer. You add everything together and it cooks down into a delicious soup. Did the kids like it? I will say yes as there was nothing left of the pot at the end of the meal! Success!
