I have openly admitted I could eat pasta every day. As Sophia Bush once said, “Life is too short. I’d much rather eat pasta and drink wine than be a size zero!” Amen!
Big Guy stopped by Chick-fil-A for breakfast and brought home two additional filets as we love to make chicken parmesan. I realized it had been a couple of days and I needed to use that chicken pronto! Instead of making the chicken parmesan, I did a variation on fettucine alfredo with chicken. I added one onion, red pepper, and a tablespoon of garlic to the white sauce. Along with some fresh parmesan, I had created the perfect mix of ingredients to top my fresh pasta from Parker's Table. The food took less than 30 minutes to prepare and certainly felt worthy of a special meal. It is a good thing we had the perfect bottle of wine for another night of pasta and wine heaven in the Carondelet Kitchen.
