Do you ever get frustrated with your ten thousand channels on television and still cannot find anything to watch? Big Guy and I were on the verge of shutting it off when we found the reruns of Ina Garten’s, “Be My Guest.”
The episode we watched featured Erin French who talked about her journey toward becoming the owner of The Lost Kitchen in Freedom, Maine. Following the interview section with Ina, they moved into the kitchen to make a meatloaf. I sat up straighter taking in her inspirational tips for this meal in homage to her father. I walked away determined to make my style of meatloaf with one of her suggestions. I sauteed bacon and onions together, then added in carrots, as suggested by Erin. I combined this mixture with my ground sirloin with panko and eggs to create a perfect loaf. I tend to be a mustard girl, do not judge me, so I did not go for Erin’s suggestion of a glaze of ketchup, brown sugar, and mustard, but I admit now I wish I had gone for it. I guess I will have to make another meatloaf…DARN!
