Do you ever have a recipe item in your head and end up with another one on your plate? It happened to me the other night. Big Guy and I had a lovely lunch @elcatrinmexkitchen with resulted in some leftover street corn. The portion was huge, no complaint, but so good I did not want to leave it behind.
I knew I had the ingredients to reinvent the corn into a side dish for the roasted chicken tenders I planned to make for dinner. As I surveyed my pantry and refrigerator, I pulled out the half and half, Mexican spices, chihuahua cheese, and a small can of white corn. I threw everything together and placed it in the oven. As I pulled everything out, I realized my mixture was more like a cheese dip than just a side of street corn. As @chefgregorypaul said, “when life gives you lemons,” I rolled with the cheesy mix, pulled out some tortilla chips along with salsa to create my own Mexican chicken dish. Muy bien!
