I love to get inspiration from books and cooking shows. We stumbled on a cooking show by Rachel Khoo where she showed the viewer how to approach Cordon Bleu cooking with a modern approach. As a graduate, she perfected her book of recipes by offering dinners in her Paris apartment. Nice work if you can get it, eh?
One recipe that I tried years ago was her Croque Madame Muffins. The main ingredients are bread, eggs, ham, and cheese. Of course, her version of cheese was a mornay cheese sauce featuring Gruyere and Dijon mustard. I did make the recipe, as written, and it was delicious. Fast forward, I realized I had ham, bread, cheese, and a lot of egg whites which were left over from my key lime pie. I decided to make my own version of a Croque Madame muffin. I rolled out the bread flat and buttered it before forming it in a muffin pan to become my bread cup for the rest of the ingredients. I filled it with ham, eggs, and Irish cheddar and baked it. Big Guy declared it a great success and, heaven forbid, said I should make it this way all the time. I am confident Rachel would approve since it is another modern twist on a classic recipe.
