I love sweets, but as I get older, I find I do not eat them often. This is ironic as my kitchen time used to revolve around cookies and cakes. Was that not the life of every young girl?
I have grown confident in my kitchen making entrees and desserts, but I do struggle to make a dish for two. I shake my head thinking of the leftovers I continue to make with my own cooking. I made an apple pie for my niece but challenged myself to make a similar dessert for Big Guy and me. In this case, the answer was simple. I baked the apples, with the crumb topping, in a small baking dish. It was the perfect amount and so delicious.
