I was making an Italian salad the other day with full confidence we had plenty of salad dressing. I opened the refrigerator to discover only avocado ranch. I quickly checked the pantry and found no salad dressing at all. SIGH! The story of the Carondelet Kitchen is we either have too many things or nothing at all. I would have settled for the avocado ranch dressing, but the promise was an Italian salad. Big Guy to the rescue with the perfect solution. “Why don’t you make your own dressing? We have plenty of olive oil and balsamic.” To quote Homer Simpson, “Doh!” I used to make dressing all the time and fell out of the habit. So, as a humble reminder to all, don’t forget this is an option. I have even added preserves in the past to make my strawberry salad pop with flavor.
