Big Guy and I love to experiment in the kitchen, but we can also appreciate hacks that allow us flavor without making the ingredients from scratch. Pico de gallo and guacamole are the perfect example.
Our dear friend taught us how to make pico de gallo with fresh ingredients. The process is not too cumbersome, but what if you do not have the time or patience to dice the tomatoes, onions, garlic, jalapeno peppers, and cilantro. You can buy it at the store. The same is true for guacamole. It seems too often the avocados are not ready to eat when you buy them, but you need it for tonight’s dinner. Again, you can buy it. If you really want to impress your friends, you can mix the two together and create a fabulous dip for your tortilla chips. We add some bacon, or store-bought bacon pieces, to give the presentation a final touch!
