It is happening! Big Guy just harvested our butternut squash and sweet potatoes. I ran to my bookshelf to start looking for new ideas for these ingredients since I do not wish to make a “hundred” gallons of soup.
Thanks to @MaureenMurphy571 for sending us a great idea for butternut squash. It is on the list. We also found a fabulous recipe for butternut squash ravioli which will test our ability in the Carondelet Kitchen to not only do the filling but the pasta dough. I have not really cooked sweet potatoes much in the past, but I know it will be a hit if I make fries with them. I may even attempt a casserole as a lead up into the holidays. I cannot wait to get started with these fresh Fall ingredients!
