I would love to start this blog with my rant about our tomato thieving squirrel, but we suspect we have an opossum in on the action at nighttime. Can you imagine that cartoon conversation? “Hey, that is my tomato! No problem, mate, I will take them at night, and you get them during the day!”
The squirrel even had the audacity to spread out on our deck rail staring at tomatoes we have in the kitchen window we grabbed before him to ripen. While slightly annoying, Big Guy anticipated the need to overplant tomatoes so everyone, human and mammal, gets their fair share of the harvest. I am glad I no longer panic over the bounty coming in at once. I discovered last year you can freeze your tomatoes immediately so you can batch them until you are ready to make your sauces and salsas. The other benefit is when you place the frozen tomato into hot water, the skin breaks, and peels easily which makes the Big Guy incredibly happy since that is his job in the sauce making process. Happy Big Guy, happy wife!
