Have you ever been to a party, opened the crock pot, and scored meatballs? I bet most of us have done it. I always enjoy them and used to walk away thinking I should make my own as part of my rotation of annual recipes.
Big Guy and I have been tinkering with our recipe now for several years. We love to put meatballs in our pasta, but also appreciate a good sub sandwich. We usually make enough to freeze so we can pull them out anytime we are in the mood to add them to our meal. I realize most people have their own recipe, but we tend to stick to equal parts ground chuck and hot sausage. Mix in egg, Italian Breadcrumbs, seasonings, and parmesan cheese. There you have the Carondelet Kitchen version. It is National Meatball Day so go out and get the ingredients to make your own version. Or, if you do not feel like cooking, go ahead and watch “Cloudy with a Chance of Meatballs” to celebrate the day!
