Big Guy is a researcher by nature, retired librarian that he is, and discovered I was using an incomplete version of the Paul Hollywood Lemon Drizzle Cake recipe. As Mr. Hollywood is on his book tour, I had used the recipe from a magazine thinking it would be easier to place on my recipe board rather than a heavy book.
As he reviewed the recipe from the magazine versus the actual cookbook, Big Guy discovered differences in the two recipes. The magazine version called for butter, but it did not mention it needed to be softened to room temperature. It called for three tablespoons of milk, but the actual recipe noted to use it sparingly. Finally, the drizzle was a split of lemon juice and sugar. The actual recipe called for the juice of a whole lemon and two tablespoons of sugar. AHA! I am still not a great baker, but I feel better knowing I was using a flawed version of the original recipe. I will be sure to go directly to my books in the future to avoid another failure in the kitchen!
