Big Guy and I were at the store with a powerful desire to get “healthier” food following our holiday indulgences. It amazes me how we move into Fall and Winter, and I tend to want heavier foods that are filling and comforting which means I have been lax in eating fresh fruits and vegetables.
One such item that is always satisfying is hummus. I know there are good brands for sale, but this is one recipe that is easy to make thanks to @inagarten and her roasted red pepper hummus. The ingredients are simple as you need garbanzo beans, lemon, tahini, garlic, salt, pepper, hot sauce, and roasted red peppers. I know you pay a little more for roasted red pepper in a jar, but it is worth it if you want to make this recipe quickly. It is a great one “pot” dish in that you place the ingredients into a blender. It takes no time to blend everything together and you are ready to serve with a topping of pine nuts, parmesan cheeses and olive oil. I usually make my hummus in early in the day to give it time to cool down and me time to clean up!
