Holy Moley, it is a hot time in the Carondelet Kitchen. Big Guy declared today the day we made the hot sauce because our batch of habanero peppers were ready for harvest.
It all seems so innocent as you place the ingredients in the pot to boil, but this is not our first rodeo. The windows were opened wide, and the fans were twirling on high so we could avoid the eye-watering episodes and coughing fits from the oils of the peppers. Our reward was a beautiful hot sauce that packs a punch with the heat tempered by a little sweet from the added sugar. I cannot wait to use this sauce in my chili this Fall.
