Big Guy and I have always enjoyed cooking for our family and friends. Obviously, the pandemic has curbed some of those celebrations, but it doesn’t mean we still aren’t inspired to think about the future. We became intrigued by a young chef out of Paris named Rachel Khoo who started to cook simple French meals out of her apartment. I used to think my kitchen was small, but she was working in a postage stamp. So impressive! As part of her journey, she decided to tackle French cooking by giving it a modern and more simple approach. Honestly, if I had not seen her show I probably would have disregarded this as something I could not handle. On one episode, she made Croque Madame Muffins. I was in as Big Guy loves cheese, ham, and eggs. It does seem a little complicated as she opted to make a Mornay cheese sauce, but I admit it was easy to make. If you are in a hurry, I tried it one time with just cheese on top. It turned out great. One other trick I learned is you could do this recipe with just egg whites. The cooking time in the recipe is perfect for both a croque with full eggs and then those with just egg whites. Check out the video to see her cook this recipe and check out her small kitchen.
