We have been reconnecting with friends lately now that the world is in a better place COVID wise. This wonderful activity has caused me to enjoy dining out again, but it is interesting how COVID changed my desire to eat big portions. It is probably retirement also with no stress from my previous JOB!
I recently brought home the remains of a delicious pasta with chicken and sun-dried tomatoes. As I looked around my pantry and freezer, I realized I had a some portion of my jingle bell pasta. Inspiration struck to add some additional vegetables with a revised portion of the garlic olive oil dressing that was originally used on the pasta. It turned out great. The bonus was being able to enjoy memories of our evening out with friends along with another meal reinvented in my Carondelet Kitchen!
