The Big Guy has taken “another trip around the sun.” He is not a big birthday fan, so I knew a fancy cake was not being made in the Carondelet Kitchen.
He does, however, love breakfast foods. I took a chance and mixed up a tri-berry muffin mix from my favorite Ina Garten cookbook. I used fresh raspberries, blueberries, and strawberries for the trio. Instead of using my muffin tins, I grabbed my Bundt cake pan and poured the whole mixture into the pan. It took longer to bake, but it was so much fun to see the Big Guy’s eyes get wide when he realized he was getting a breakfast treat for his birthday. I guess I have really been in the mood this week to “play” with my food and create typical dishes in untypical ways! This is what happens when you are between winter and spring foods!
