Do you remember going to an event and being served meatballs? I enthusiastically try them, but it always seems they were lacking something to make them truly delicious. Yes, I can be swayed by a terrific sauce, but I tended to be underwhelmed by the flavor of the meatball itself.
I guess I do not need to explain that Big Guy and I went on a mission to create the perfect meatball. I know there are family recipes, and even Ikea faithful, but we wanted something we could put into a sandwich, soup, or a big bowl of pasta. We have tinkered with the recipe and remained true to it. The only thing we alternate is whether we use a spicy sausage or an Italian sausage depending on our planned meals. The mix is lean ground beef, sausage, egg, panko, and parmesan cheese. Big Guy always makes a full tray of them to be enjoyed hot out of the oven and in our day’s meal. As there are leftovers, he splits them into bags and freezes them for later use. Perfect!
