Big Guy and I made a stop at our new favorite shop, Vicini Pastaria, to load up on more delicious pastas. Chef Dawn was at the counter guiding us on our selections and we opted for three different pastas along with a loaf of scarpaccia, which is an Italian flatbread. Chef Dawn noted it is similar to focaccia, but definitely Tuscan in texture and flavor.
I decided to cook first with the gramigna. This artisanal handmade pasta was perfect in a white parmesan sauce with red peppers, onion, and snap peas. Big Guy calls this my Christmas pasta not only due to the colors, but it was it that holiday when I first made this mix of ingredients. The pasta was perfect with the creaminess of the sauce. We grabbed a red blend from Sean Minor Wines to make it the perfect meal!
