Big Guy and I were taught how to make authentic pico de gallo from a dear friend many years ago. For those who don’t know, the main ingredients are tomatoes, onions, garlic and jalapenos. It is just so fresh and delightful especially when you harvest your own vegetables from your urban garden.
The upside is having a fresh zesty salsa with any meal you prepare with Mexican flair. It tends to make a lot so what to do with the leftovers? We got creative the other night and decided to bake a chicken breast served with a side of rice mixed with our pico. Without too much effort, we now had a fresh side of Mexican rice and no more leftovers. I realize it takes time to think about reusing leftovers especially with the pressures of daily life. I just hope this may inspire you to be creative as well!
