I mentioned the soup pots were going to be hitting the stove due to the Fall weather. First up is a favorite…Bacon and Baked Potato Soup. I found this recipe years ago in a Midwest Living magazine and just fell in love with it. Most of the prep time is baking your potatoes for one hour along with eight slices of bacon. Obviously, the bacon won’t take an hour, but you can cook them together. The kitchen smells good, and I am already salivating! The rest of the ingredients come together very quickly so you are eating not long after your potatoes and bacon are cooked. You have the usual suspects in onions and celery but the chicken stock and half and half with cheddar cheese are the real show. In the end you have a creamy and very filling pot of delicious soup!
