I can tell spring is in the air, but I am gravitating back to my favorite summer meals. I am suddenly craving fruit and vegetables along with fresh meats and cheeses. Yes, I realize I should eat these foods all year long, but I do find I eat seasonally!
At a recent dinner out, I ordered spinach salad which I think really got me in the mood. Big Guy and I hit the market and bought tons of fresh fruit and vegetables to keep my cravings satisfied. No offense, but I think I may have eaten one meal too many out of my collection of frozen food. I set out to recreate the spinach salad. It is really a simple salad with spinach, Crasins, feta or blue cheese, fresh pear, a bit of bacon, and a good balsamic dressing. I got a little crazy and added toasted pumpkins seeds for extra crunch. I am now dreaming of hummus and other summertime favorites along with lovely bottles of wine. Bring on the warmer weather so we can enjoy it alfresco on the porch!
