Big Guy has romaine and spinach lettuce growing in the cold frame, but I became impatient for the taste of summer. I stopped by the store and picked up spinach and pears so I could make my version of a spinach salad.
I realize “my” is a big term, when I am sure there are those who make it the same way. I enjoy a simple salad with pears, light on the red onion, a tablespoon of bacon bits, parmesan cheese and dressed with a vinegarette dressing. I opted to mix my olive oil and vinegar with a heaping tablespoon of strawberry preserves to kick up the flavor. It was the perfect way to remind me of the fresh food coming our way from the Carondelet Garden.
