I am not in love with the heat of summer, but I do love the food that is symbolic of longer days and special treats. Last year I was making jams, but this year I opted to enjoy my strawberries in other traditional ways.
How often do you walk past the strawberries and see the shortcakes next to them? I realize these two ingredients are together to “suggest” the perfect dessert. I finally succumbed to this thought the other day and marked them on the grocery list. To my surprise, my store was out of the little shortcakes, but fortunately there were mini pound cakes made by Entenmann's which was a great substitution. The strawberries were gorgeous and tasted sweet even without a little extra sugar. Yes, I ate a couple of them to be sure they would be perfect for my dessert. Once I added the strawberries with the pound cakes and Cool Whip, it was summer on a plate. So good!
