I have mentioned my dear friends who started their married life as our next-door neighbors in the context of canning or as we call it “ca-jarring.” As Big Guy and I started this project, I have been scanning photos from past years and discovered that we have been doing our annual W.O.W. canning session for ten years. Times have changed and our lives are busy, but we always prioritize making marinara and apple butter every fall. I realize these two foods seem like an odd combination, but this is a great time of year to get the end of season tomatoes for the marinara. And it is Fall and we must make apple butter. We have gotten good at breaking down the work to speed up the process as we’ll bring the tomatoes, and they will bring the onions and garlic. Between the four of us there are spices, wine and herbs being thrown into the pot. While the sauce is marinating, we can the apple butter which was bubbling overnight in a crock pot thanks to our friends with much help by their almost five-year-old. We usually break for lunch and sometimes some of the extra wine not used in the sauce. After a couple of hours, we can the marinara and we are set for another winter of fresh food…and great memories!
