We have long enjoyed the book and subsequent mini-series of Peter Mayle’s, A Year in Provence. As part of the story, there are many conversations about truffles. Of course, we were always curious but were not ready to run to France with a pig to look for them. So, while recently visiting our favorite wine and specialty food store, Parker’s Table, Simon mentioned the truffle paste they carry that pairs well with their homemade pasta. We were in and so glad we took his suggestion. The pasta took the most time to prepare as the heated sauce was simply good olive oil and the truffle paste. Big Guy usually puts in a little garlic salt and pepper to taste to bring up the flavor profile. I will share the first time Big Guy made the truffle pasta it was for my birthday. I love that the meal is so quick and easy to make and doesn’t need to be for a special occasion.
