My MIL was an old school cook when it came to making her dressing to go with the annual turkey. I wanted to love it, but I had a hard time getting past the ingredients. She believed in using giblets and sweet breads as part of her dressing. She also used a lot of sage which, in any given year, could give the dressing a lovely shade of green.
Big Guy wanted to make dressing one year, and I admit, I was fearful knowing he was taught to make his mom’s dressing. The good news, for me, was he found a great recipe from @inagarten which has become a staple in our home for over a decade. It is a lovely mix of sausage, cranberries, Calvados, stuffing mix, and herbs. It gets even better when you use a turkey breast, add a layer of this dressing, truss your turkey, and baste and bake it. It makes a “fancy” turkey roulade that will have your guests talking for years!
